For our mom’s lunch last week, our theme was lemon so I decided to make some lemon cake pops. I’d never made these before but kept seeing them on cooking blogs. They are really easy, look cute, and keep you from eating more than just a little bite of cake. I followed Bakerella’s instructions for them, but made a lemon buttercream to go with the cake.
I only needed half a cake for the pops, so I decided to use the other half to celebrate E’s 6 month birthday with a half-cake. Only Mitch and I ate it, but we got some cute pictures with Emerson eyeing it. To keep it from being too sweet, I filled the inside with custard and only used the lemon buttercream on the top and outside of it. I think we ate way too much sugar last week.

Shannon, you are so talented! I've been thinking of making cake pops for a LONG time now but haven't gotten around to it. What did you think? Were they as delicious as they looked? I love lemon, so my mouth is salivating right now! :)
I love those cake pops. But it's funny because they have the opposite effect on me. I'll eat one piece of cake, but with those pops? They are so tiny, that I will (easily) inhale 10. Sad, but true.
