The Holidays

We’ve been going through some difficult experiences, so we were grateful to have Christmas Eve and morning to be together and relax. We love having our own traditions and celebrating as a couple. We had a healthy Christmas Eve dinner, relaxed, and caught up with family. We had a fun family home evening about Christ and the meaning of Christmas symbols. It reminded us that Christmas is about spending time with loved ones, reflecting on the Savior, and about reaching out to those who need help not just those we are already close with. It also reminded us we need to do more than just read the scriptures of Christ but work to be as he was. We are hoping that we can teach ourselves how to be better about giving gifts of love and service, rather than purchasing things.

The great news before the holiday was that I passed my prospectus defense for my master's project! I am scheduled to graduate in May with my MS, pending my final project and defense are approved.

During our break, I cooked and baked almost every day, which always relieves my stress and lets me creatively relax. My recent recipes included butternut squash ravioli with béchamel, orange-cranberry glazed asparagus, fresh tortilla guac-stuffed fajitas with extra sharp Cabot sent in from Vermont (thank you lovely grandma), roasted sweet potatoes, crab-stuffed herbed salmon, fried yam/maple pecan/gorgonzola salad, peppermint fudge, homemade Andes mints, best chocolate chip cookies, and our favorite cream puffs.

Thank you to our wonderful family and friends who made this first Christmas in our new house so special.

We spent the rest of the holidays with friends and many people stopping through Utah (perks of the motherland!). Elise and Jason stayed with us last weekend and Mitch’s brother Jeff, his amazing wife Becky and little Chloe were here this week. We had a great time with them and wish we could see them more.

Congratulations on your Master's. That is quite the accomplishment. And I didn't know you were such a good cook! We should swap recipes. We have a prosciutto and spinach lasanga that is the best ever! I'm glad you had such a Merry Christmas!

That's exciting that your Master's defense is approved. I remember when Mike got his approved and he was thrilled but at the same time knew he had so many hours of work ahead of him. Good luck! I'm so impressed and don't know how you juggle everything.

You have so many great things to celebrate! Way to go on your Masters, and the house... so fun! I'm impressed by your "menu" of items you prepared over the holiday, too. Whew! You've been busy. Sounds like we'll see you this Saturday!

We got your cute Christmas card and it's up on the Miller fridge of fame! You guys are adorable and always have the best cards. I hope you're doing okay with your trials. Congrats on your Masters!! I'll keep my fingers crossed that you graduate on schedule. I can't wait until I have a gorgeous kitchen like yours with counter space so I could make gourmet fare like you! :)
